Description:
The acid value (AV) is a common indicator for the quality of oils. It is defined as the weight of KOH in mg needed to neutralize the organic acids present in 1g of oil and it is a measure of the free fatty acids (FFA) present in the oil. Typically, the oil is likely to be hydrolyzed under the growth of microorganisms and exposure to sunlight during storage; as a result, free fatty acids is produced. Thus, the concentration of free fatty acid is inverse to the quality of oil. In general, oils with a slightly higher acid value are benign; but if the value is exceeds the range, taking in the oil will cause diarrhea and the damage to the liver. The Peroxide value (PV) is an indicator of the degree of oil oxidation. It reflects the intermediate products generated in the process of oil oxidation and rancidity, a substance that is very unstable and can continue to decompose into aldehydes, ketones and other oxides. These products not only destroy the flavor and nutrition of food, but also poses a certain risk to human health. By comparing the results with the standard colorimetric card, the AV and PV is semi-quantitative evaluated with FSTest Acid Value (AV) & Peroxide Value (PV) Rapid Test Kit.

Procedure & steps
1 Take a moderate amount of cooking oil sample into a clean anddry container.
2 Keep the oil sample at 25±5℃ until test.
Procedure & Steps
1 Take out a test strip from the package.
2 Mount 2 drops of oil sample with dropper onto the test area ofthe strip.
3 Interpretate the results after a period (AV for 10 sec and PV for 10 min).
Results interpreted
Reference to the colorimetric card, determine the AV and PV based on the color on the test area. If the color is between the adjacent colorimetric standards, then the average value is chosen.
