Mycotoxins are toxic substances naturally produced by specific types of moulds (fungi). These moulds grow on numerous food products, such as cereals, dried fruits, nuts, and spices. Often triggered by warm and humid environments, mould growth can develop directly on or inside the food, whether before harvest or during storage. Notably, because most mycotoxins are chemically stable, they easily survive typical food processing methods.
